About the Author

An expert in the field of healing food and wellness cuisine, Chef Kuntal Kumar is an alumnus of Institute of Hotel Management Kolkatta, India. He holds the Western nutrition certificate with distinction from Australia, and also completed his advance Ayurveda nutrition from Kerala, India.

He spent close to 20 years delving deeper into the world of phytomedicine and the healing qualities of natural food. He worked with the leading wellness retreats and resorts in India, England, East Africa and Costa Rica and spent many years in the company of healers, alternative medicine doctors, ethnobotanist, foragers and keepers of traditional knowledge. He was also the trainer of Culinary Arts and education in his last assignment and continue the same pursuit in Costa Rica. In his current role he is studying the food and habits of Maya, Inca and Aztec civilisations, and ways to utilise the knowledge therein for natural healing and wellbeing of his guests and community.

In the newest proposition Kuntal summarizes his experience of wellness world with a multidisciplinary approach to spreading the awareness that food can be both delicious and nourishing. He included the four kingdoms viz plant, animal, fungi and bacterial and six taste viz sweet, sour, salty, pungent, bitter and astringent coupled with healthy cooking techniques with guidance for “MODERATION”.

In his last hardcover book titled “The Original Organic Cookbook”, he extolled the virtue of eating food grown without chemicals. The book offers a selection of international recipe in user free format so that even a beginner can be certain of good results. The book was published in the year 2008 by TERI (The Energy Resources Institute of India- www.teriin.org). It also won a prestigious annual awards for book production instituted by the Federation of Indian Publishers in science/ technical/ medical category.
